How Deep Fryer to Air Fryer Conversion Works
Deep frying and air frying reach the same finish line, a crisp browned crust, by very different roads. Hot oil transfers heat many times faster than hot air, which is why fries deep fry in 4 minutes but need 12 to 15 in an air fryer. The conversion rule reflects that: keep the temperature the same as the oil temperature (or go up to 25°F higher), and multiply the frying time by about 1.5. Fries fried at 350°F for 8 minutes become air fried at 375°F for about 12 minutes.
Oil still matters, just in teaspoons instead of litres. A light, even spray of high smoke point oil on the surface is what lets the crust brown and blister the way oil immersion would. Skip it and breaded food comes out pale and dusty. Spray, do not pour; pooled oil in the drawer just smokes.
What Converts Well and What Does Not
Frozen pre fried food (fries, nuggets, spring rolls), breaded items, wings and bone in chicken all convert brilliantly, often ending up crisper than greasy takeaway versions. The one thing that does not convert is wet batter. Beer battered fish or tempura dipped in liquid batter will drip straight through the basket before it sets. For battered recipes, switch to a breadcrumb or panko coating, which becomes glorious in the air fryer, or cook battered items from frozen where the batter is already set. For breaded chicken and similar, a flour, egg and panko line up plus oil spray is the reliable route to deep fried texture.

Times assume a single layer in the basket. Crowding is the number one cause of soggy results when converting from deep frying, so cook in batches.
